Fruit Danish

Ingredients:

1 tbs dry yeast
1/4 cup + 1 tbs sugar
1 cup warm water
2 & 1/2 cups flour
1/3 cup light olive oil
1 tsp salt
1/4 tsp vanilla
1 12-oz canned fruit pie filling (cherry,
blueberry, apple etc..)
2 tbs extra light olive oil

Directions:

1. In a large bowl, whisk together the yeast, 1
tbs sugar and warm water. Let stand for 5
minutes.

2. Add the flour, 1/3 cup oil, 1/4 cup sugar, salt,
and vanilla

3. On a floured surface, knead dough for 3
minutes

4. Place dough in a large oiled bowl, cover
with a slightly damp towel, and let stand in a
warm place until double in size, about 1 & 1/2
hours.

5. Punch dough down and knead for 1 minute

6. On a floured surface, roll out dough to 15 x
20 inches

7. Cut into 3 x 4-inch pieces. Place 2 tbs fruit
filling in center of each square.

8. Fold two opposite corners together so they
overlap. Place on a lightly oiled baking sheet.
Let stand for 20 minutes.

9. Preheat oven to 350 degrees F.

10 Bake the pastries for 12 minutes. Lightly
brush pastries with 2 tbs oil and continue to
cook for 5 more minutes or until pastry is no
longer doughy in center.
