Upside-down Pear Cake

Ingredients:

3 ripe pears, peeled, halved and cored
3/4 cup butter
3/4 cup plus 2 tablespoons sugar
3 eggs
1 cup plus 2 tablespoons self-rising
flours
3 tablespoons milk
2 tablespoons icing sugar
teaspoon cinnamon

Instructions:

1. Preheat oven to 350 degrees F.
Prepare an 8" by greasing and lining
pan with waxed paper or parchment
paper
2. Arrange the pear halves evenly over
the bottom of the prepared pan and set
aside
3. Using an electric beater or food
processor, cream the butter and sugar
together in a large bowl until the mixture
is light and fluffy.
4. Beat in the eggs, adding them one at
a time and mixing well after each
addition.
5. Add the flour to the bowl, gently fold
it into the mixture, then stir the milk
6. Spoon the cake batter evenly over
the pears and smooth the surface
7. Place pan in preheated oven and
bake for 45 minutes or until the surface
is firm when gently touched and the
cake has slightly come away from the
sides of the pan.
8. Remove from the oven, let cool for 5
minutes, then turn out onto a serving
plate. Peel away the waxed paper or
parchment paper, dust the top of the
cake evenly with icing sugar and
cinnamon and serve immediately with
ice cream or whipped cream if desired.
